V8 is made of the following:

tomatoes, beets, celery, carrots, lettuce, parsley, watercress and spinach.

According to Wikipedia:

V8 is 87% tomato juice and contains a daily serving of both fruits and vegetables per 8oz glass. V8 was invented by W.G. Peacock. In 1933, poor sales of his Vege-min juice line, lead to the blending the Vege-min juices into one product and selling this new concoction as "Vege-min 8." A grocer in Illinios recommended that he shorten the name to "V-8." Campbell Soup Co. nows owns V8
